EC Regulation No. 178/2002 defines traceability as "the ability to trace and follow a food, feed, food-producing animal or substance intended to be, or expected to be incorporated into a food or feed, through all stages of production, processing and distribution".

Meat traceability

The purpose of traceability is to ensure that everything that enters the food chain (feed, live animals for human consumption, foodstuffs, ingredients and additives) retains a trace of its history, following the path from the raw materials to the supply to the final consumer.


This allows FBO and control authorities to isolate a production batch in the event of an emergency by "tracing" the various production steps (raw material flows: documentation of origin and destination, etc.) and defining control measures for possible hazards.
